RAISIN-WALNUT PORRIDGE

Ingredients:

1/2 cup chopped walnuts
3 cups water
1/2 cup raisins
1 1/3 cups old-fashioned rolled oats
Salt
2 tablespoons unsalted butter
4 tablespoons light brown sugar
4 tablespoons light cream or milk

Directions:

In a small skillet saute chopped walnuts over medium heat until lightly toasted, about 3 minutes.
 Remove from heat; set aside.
In a medium saucepan bring the water to a boil over medium-high heat.
Stir in raisins.
Reduce heat to medium-low and simmer until raisins are plumped, about 3 minutes.
Return liquid to a boil.
Gradually add oats, stirring with a wooden spoon.
Cook, uncovered, stirring frequently, until oats are softened and very thick, about 5 minutes.
Season with salt.
Stir in butter and toasted walnuts.
Serve hot sprinkled with brown sugar and with cream or milk.
4 servings.
